To prep the artichoke: Peel away outer layer of leaves. Cut (Chop) off top 0.5 inch of baby artichoke and its stalk. Slice it 1/4″ length wise. Soak it in a bowl of lemon water.
In a large pan, put enough olive oil to cover the bottom of the pan. When oil is boiling, add the garlic and fry for about 15 seconds over medium-high heat.
Add a layer of artichokes in.
Fry the artichokes until the edges are a little charred and crispy, about 5 minutes, flipping over once.
Top with a sprinkling of sea salt, pepper and a lemon juice.
