Ingredients:
1 ½ pounds wax beans
1 tablespoon olive oil
1 shallot, sliced
1 clove garlic, chopped
1 bunch flat leaf parsley, chopped
Directions:
In a large pot, bring salted water to a boil and prepare a bowl of ice water. Add the beans, boil them for 40 seconds, then drain and place them in the ice bath
Heat the oil in a large pan over medium heat. Add the shallots and garlic, and cook them until fragrant, about 2 minutes. Drain the beans and add them to the pan.
Cook for about 2 minutes. Toss the beans with the parsley, season with salt and pepper, and serve
