Have fun with using the baby peppers like a jalapeno with this popper-styled recipe!
Ingredients:
500g Minced Beef
15 Baby Pepper
2/3 cups vege broth
1/2 cup chopped Spinach
1/4 cup Couscous (optional)
2 teaspoons minced Garlic
1/2 teaspoon Oregano leaves or Rosemary
1/2 teaspoon Salt
1/2 teaspoon black Pepper
1/2 cup Cheese (we recommend the Red Leicester Cheddar or Aged Gouda!)
Directions:
Heat oven to 400°F. Cut baby peppers in half lengthwise; remove seeds and membranes, but not stem
Place baby peppers, cut-sides up, on baking sheets. Combine minced beef, vegetable broth, spinach, couscous, garlic, oregano, salt and black pepper in large bowl, mixing lightly
Spoon beef mixture evenly into peppers
Sprinkle with cheese
Bake, uncovered, in 400°F oven 25 to 30 minutes or until peppers begin to brown
