Ingredients:
1.5 pounds Kumato tomatoes or any ripe tomatoes, seeded and juices reserved
1 cucumber roughly chopped
2 stalks celery roughly chopped
1 small carrot peeled and roughly chopped
2 teaspoons Sherry vinegar
1/2 teaspoon vegan Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon black pepper
1 cup water or vegetable stock
Diced avocado or cucumber for serving
Directions:
Combine all the ingredients except for the water/stock and blend. Add the water and puree till smooth
