Looks hauntingly beautiful isn’t it? Almost looks like a beautiful sunrise that’s about to break out!
Ingredients:
2 strips of bacon
1 cup sliced mushrooms
1 cup red kale leaves
3 cage free eggs, whisked
sea salt
pepper
1 ripe avocado
Directions:
In a small pan add oil and fry the bacon
Add mushrooms and let them sizzle for 5 minutes until slightly browned and soft
Add kale followed by whisked egg. Cook the eggs omelette style
Mash avo with fork and top that onto the kale and egg
Season the dish with salt and pepper
